Coconut Pancakes with Fruit Topping

Coconut Pancakes

  • 6 tbsp coconut flour
  • 1 tsp baking powder
  • ¼ tsp sea salt
  • 6 tbsp canned coconut milk
  • 6 eggs
  • ½ c honey (optional)
  • ¾ tsp vanilla extract
  • 1-2 mashed ripe bananas

*Mix dry ingredients together.
*In a separate bowl, combine wet ingredients.
*Using a mixer, blend the two together. The mixture may seem too loose. If so, let it sick for a few minutes and it should thicken. If not, add a small amount of coconut flour and
then wait again a few minutes before adding more.
*Grease griddle if needed with coconut oil or butter. Cook on griddle.
*Serve with fresh or cooked fruit topping. Yum!

Cooked Fruit Topping

  • ½ c water
  • 1-2 c strawberries and rhubarb combination

*In a small saucepan, bring water and berries to boil.
*Boil until softened. Add water to the pan if needed.
