Paleo Egg Salad

  • 2 Boiled Eggs
  • 1/2 cup Cucumber
  • 1/4 cup Celery
  • 1/4 cup Onion
  • Jalepeno (optional)
  • Drizzle of Olive oil
  • 1/4 teaspoon Mustard seasoning
  • Salt and Pepper to taste*Chop up eggs and veggies.
    *Stir together.
    *Drizzle olive oil, seasonings and mix.
    *Serve on a large bed of spinach and tomatoes.
