Spaghetti Squash and Meat Sauce

  • 1 whole spaghetti squash

*Preheat 350.

*Bake whole squash in 9×13 with enough water to cover bottom of the dish for 1 hour.

*Remove carefully and let cool.

*Cut ends off and cut in half.

*Scoop out seeds.

*Use a fork to scrap out the “meat” of the squash. It should look like noodles.

Super Simple Meat Sauce Base

  • 2 pounds of ground beef, turkey or chicken
  • 1 large can of crushed tomatoes
  • Variety of veggies to add to your homemade sauce

*Brown meat in pan. Drain fat.

*Chop a variety of veggies including zucchini, mushrooms, onions, spinach and saute in saucepan with evoo.

*After about 5 minutes, add the crushed tomatoes.

*Add meat to sauce and continue simmer until veggies are thoroughly cooked.

*Pour meat sauce over spaghetti squash.
