- 1-2 Whole fresh mango, depending on preference
- 1 Red pepper
- ½ Red onion
- ½ Bunch fresh cilantro
- Squeezed juice of 1 lime
- Drizzle of evoo
- Drizzle of honey, optional
- 1 Can organic low sodium black beans, rinsed
- Cajun seasonings to taste
- Salt to taste
- Optional additional ingredients: cucumber, tomato
*Chop and mix together all ingredients.
Delish as a side chutney or on top of chicken or beef. Light and refreshing!
