• 1.5 c almond meal
  • 1 tbsp Enjoy Life mini chocolate chips
  • 3 tbsp coconut oil (unrefined)
  • 2 tbsp honey
  • 1 large egg


  1. Mix all ingredients together in a bowl. Mixture will be thick.
    *Tip* If coconut oil is solid, stick it in the microwave to melt but keep from getting too hot.
  2. Using a spoon, drop the mixture into 12 small cookies.
  3. Bake at 375 for about 10 minutes or until done.
