Today I wanted to write to you about something near and dear to my heart….the Instant Pot.

First off, I must confess, I always refer to it as the InstaPot. Why? I actually don’t know how it started but now I just think it sounds so much cooler.

The InstaPot is an electric pressure cooker. Now, this ain’t your grandma’s pressure cooker. If you are like me, you grew up knowing there was something serious to fear about the pressure cooker. It could blow off your hand or explode in your face…I‘m not even sure if it’s true. But, our reality is our truth, right?!

The InstaPot arrived on my doorstep. I brought it in the house and let it sit on the kitchen counter for almost a full week before embarking on the “learning how to use” process. I carefully read the manual and watched four YouTube videos on how to safely use the machine. Then it was time. I ran my first pot of pressurized water. After ensuring I understood how to safely pressurize and depressurize the machine, I was ready to cook my first roast.

My family and I love a good roast. For years I have been a huge fan of the slow cooker. Simple, easy, tasty, tender meals come out ready to eat with minimal effort. The problem, it’s sloooow. If you do not planned ahead with the slow cooker, you are not having roast for dinner. The InstaPot solves the only problem of the slow cooker. Time.

If you are busy and struggle to have time to prepare a wholesome dinner, THIS is your answer. Do you meal prep? THIS machine is your answer too. Chicken breast and pork tenderloin are cooked to perfection in less than 15 minutes from start to finish. Roast can be done in one to two hours at most. My fastest roast to date was done in 40 minutes! There is even a saute setting so you don’t have to dirty another pot nor deal with splashed oil from browning the meat.
