  • 1-2 Whole fresh mango, depending on preference
  • 1 Red pepper
  • ½ Red onion
  • ½ Bunch fresh cilantro
  • Squeezed juice of 1 lime
  • Drizzle of evoo
  • Drizzle of honey, optional
  • 1 Can organic low sodium black beans, rinsed
  • Cajun seasonings to taste
  • Salt to taste
  • Optional additional ingredients: cucumber, tomato

*Chop and mix together all ingredients.

Delish as a side chutney or on top of chicken or beef. Light and refreshing!
