• 2 pounds ground beef, turkey, or beef/pork combo
  • 1 egg
  • ½ c gluten free bread crumbs
  • 1 small sweet onion, grated over meat mixture
  • 1 package Nitrate/Nitrite free bacon

*Preheat oven to 350.

*Using your hands, mix meat, egg, breadcrumbs, and grated onion.

*Add to loaf dish/pan.

*Cover top of loaf with three to four stripes of bacon.

*Bake 350 for one hour.

*Carefully drain grease/fat from dish.

*Let it sit on the counter for 5-10 minutes then serve.

One fun way to switch things up is to make Meatloaf Minis! Follow the instructions above but instead of the loaf pan, put the meat mixture into a cupcake tin. Using kitchen shears, cut the bacon into appropriate sizes to put on top of minis.
